Pollution has dropped, community spirit is up, and the importance of general hygiene has been given the prominence it rightly deserves.<\/p>\n<p>An interesting trend that&#8217;s popped up is that a lot of men, particularly in cultures where it&#8217;s traditionally the woman&#8217;s role to cook, have taken up cooking. They are relishing the opportunity, well, to play with relish and conjure up all sorts of culinary delights.<\/p>\n<p>There&#8217;s nothing more satisfying as savouring a tasty meal that you&#8217;ve prepared yourself, or to watch others greedily lap up your tasty creations. So here&#8217;s my first recipe, Fowl Badun, a complex preparation made easy for many beginners to execute.<\/p>\n<p><strong>Fowl Badun<\/strong><\/p>\n<p>The chicken curry in the clay pot is my version of a rather complex recipe I found in an old cookbook that I stole from my mother 35 years ago.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-2945 alignright\" src=\"https:\/\/globalindianstories.org\/wp-content\/uploads\/2020\/04\/Senthil_R1_4-300x203.jpg\" alt=\"\" width=\"300\" height=\"203\" srcset=\"https:\/\/globalindianstories.org\/wp-content\/uploads\/2020\/04\/Senthil_R1_4-300x203.jpg 300w, https:\/\/globalindianstories.org\/wp-content\/uploads\/2020\/04\/Senthil_R1_4.jpg 619w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/>The book itself is a delight, a 1964 edition of the \u2018CEYLON DAILY NEWS\u2019 COOKERY BOOK.<\/p>\n<p>When I first made the \u2018Fowl Badun\u2019 to try and impress my new wife I made the coconut milk from scratch! That was three decades ago, you didn\u2019t get coconut milk in convenient tetrapacks. I also used the 20 red chillies the original recipe called for!! and also roasted the spices individually.<\/p>\n<p>I\u2019ve become lazier since. The curry still tastes the same though.<\/p>\n<p><strong>Ingredients:<\/strong><br \/>\nOne Chicken<\/p>\n<p>Dry Roast the following in a pan &amp; grind to a powder in a mixie:<br \/>\n5 red chillies, okay I use 10<br \/>\n1\/2 teaspoon fenugreek seeds<br \/>\n1 tablespoon coriander seeds<br \/>\n1 teaspoon jeera<br \/>\n1\/2 teaspoon saunf<\/p>\n<p>Chop<br \/>\n1 large onion<br \/>\n4 cloves garlic<br \/>\nA little ginger<\/p>\n<p><em>Method:<\/em><br \/>\n<img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-2943 alignright\" src=\"https:\/\/globalindianstories.org\/wp-content\/uploads\/2020\/04\/Senthil_R1_2-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" srcset=\"https:\/\/globalindianstories.org\/wp-content\/uploads\/2020\/04\/Senthil_R1_2-225x300.jpg 225w, https:\/\/globalindianstories.org\/wp-content\/uploads\/2020\/04\/Senthil_R1_2-315x420.jpg 315w, https:\/\/globalindianstories.org\/wp-content\/uploads\/2020\/04\/Senthil_R1_2.jpg 600w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/>Throw all of the above including the chicken into a deep pan. Add a small bit of cinnamon, and a tetra pack of coconut milk (200 ml) and two cups of water. If you have curry leaves throw them in. Note: No oil, you don\u2019t fry anything.<\/p>\n<p>Let it boil till the chicken is cooked. You can at this stage do a tadka with ghee and some onions and add the juice of half a lime. It really goes great with rice.<\/p>\n<p>And if you are wondering what the dark, dark brown stuff in the shell shaped bowl in the picture at the top of the story is, it\u2019s a Kerala beef fry.
